Digital Refractometer for Measuring Salinity (Sodium Chloride) in Brine with Disposable Pipettes

This is a refractometer that is calibrated with distilled water, and used for measuring the concentration of salt in your food system; specifically brines. The refractometer converts the refractive index of the sample to g/100g, g/100mL, specific gravity, and ºBaume. No more buoyancy meters that break easily, aren't accurate, and a waste of money. This meter is very accurate at plus or minus 0.2g/100 mL, which translates to 0.2% salt content at 68ºF (basically room temperature for most). The meter can read concentrations of 0-34g/100 mL, which translates to concentrations of 0-34% salt. Based on what product you are making you may want to make a brine that is less concentrated (like fish) versus if you are going to brine a 30# ham that will require a higher concentration to penetrate the muscle then equalize. It is an essential tool to have for maintaining consistency in your products, and can be used in your HACCP plans for setting critical limits for salt concentrations in your brined products. We have also included 65 disposable pipettes for sampling brines as well!

 

Rule of thumb: the meter uses the way that light is refracted through the sample to determine what concentration of solute (salt) is dissolved in the solution. This being said, sugar can give you a false reading. Do NOT add sugar before testing the salt content. This will give you a FALSE reading! The sugar will further refract the light, and give you a higher concentration.

 

FIRST add your salt and cure to the liquid, THEN take the measurement in g/100 mL, and THEN add your sugar.
